Farmers garden guacamole

I could eat avocados every single day. I love coming up with unique variations to guacamole (see my Basil Parmesan Guacamole recipe for another amazing twist). This recipe is a great way to add some extra nutrients and lots of great textures as well as colors. The vegetables I add (orange and yellow peppers, sweet corn, yellow or white onion, and different kinds of tomatoes) add the best textures and sweetness to each bite. You can of course add any other veggies you like, change up the ones I use or add more to mine.

In addition, a secret ingredient I discovered years back was to add a splash of white vinegar into all of my guacamole recipes. It adds the perfect tangy balance to the salt, acidity from the lime, and of course to the creamy avocados.

This guacamole is so simple yet different enough for a great change. I hope you enjoy it as much as I do. Oh, and it never hurts to enjoy it with an ice cold margarita either. (*wink*)

RECIPE TUNES (because everything is always better with music)

INGREDIENTS

  • 4-5 medium ripe avocados
  • 1 small yellow pepper finely chopped
  • 1 small orange pepper finely chopped
  • 1/2 small white or yellow onion finely chopped
  • 2 Roma tomatoes (or any kind of tomatoes you love) finely chopped
  • 1 bunch of cilantro finely chopped
  • 1 11 oz. can of sweet corn
  • 2 tsp Kosher salt
  • 1 large lime or 4-5 tsp lime juice
  • 3-4 tsp vinegar (Any of these will do: white wine, distilled white, rice or rice wine, white balsamic. Basically any clear cooking vinegar.)

LETS COOK!

  1. Scoop your avocados into a large deep bowl.
  2. Chop all of the veggies you plan to use fairly well (peppers, 1/2 onion, tomatoes) and add them to your avocados.
  3. Add your corn.
  4. Finely chop your cilantro and add that.
  5. Add 2 tsp kosher salt.
  6. Add the juice of half of your lime.
  7. Add 3 tsp vinegar.
  8. Using a large spoon, gently alternate mixing and mashing your ingredients until your avocados are broken up and incorporated to the creaminess that you prefer (I like to have chunks of avocado in mine, not super smooth).
  9. Once everything is mixed together well, taste it and add more salt, lime juice and/or vinegar as needed.

ENJOY!

TIP: Always buy at least one extra avocado. If you ever make your guacamole too salty just add in the extra avocado.
